What is a chicken roll?

A chicken roll is chicken and cheese baked inside pizza dough. On Bravo's menu, that item is the Chicken Parm Roll.

A roll is not a slice

A chicken roll at a pizzeria is baked dough wrapped around chicken and cheese, cut into pieces you can pick up. It is closer to a stromboli than to a slice, and closer to stuffed bread than to a hero. You do not fold it. Shops also sell sausage rolls, meatball rolls, and eggplant rolls. Chicken is the one people ask about when they did not grow up ordering it.

The dough is pizza dough. The filling is the variable. The roll is sealed, baked until the outside is firm, and sliced. It is the extra item when the table already ordered a pie and someone wants chicken.

How it differs from the things next to it

A hero is a sandwich on a long roll. A chicken parm hero is cutlet, sauce, and cheese in bread that was not baked around the filling. A chicken roll bakes the filling inside the dough, so the outside is crust.

A calzone is a cousin: dough folded over cheese, often one portion. A roll is usually longer, sliced into several pieces, and meant to be shared. A chicken pizza is different again. That is a pie with chicken as a topping and a rim you can hold. A roll does not have a rim. The chicken is in the spiral.

The chicken roll on Bravo's menu

Bravo lists a Chicken Parm Roll under Calzones & Rolls, served with marinara. The same section lists a classic calzone, a meatball roll, a sausage and pepper roll, and an eggplant roll. Order the Chicken Parm Roll when you want chicken parm inside dough. Order a different roll when you do not. This menu does not list a separate buffalo chicken roll or a grilled chicken roll, so those names should not be assumed at the counter.

When a roll is the right order

Order a chicken roll when you want chicken and cheese inside dough, not a slice and not a hero. Add a pie if the rest of the table is not in the mood for a spiral. Plan on sharing. Dough, cheese, and chicken in one bite adds up faster than a plain slice.

For a larger group, pies, heroes, and catering trays scale better than a single roll. A roll is still a good extra on that ticket if someone asks for one. The family has made pizza since 1985, and the New Dorp Lane shop opened in 2020.
