What Is Grandma Pizza?
Grandma pizza is the square pie that is not a Sicilian. At Bravo it is a menu item with that name, plus a Grandma Slice.
The style, in plain terms
Grandma pizza came out of Long Island pizzerias: a square pie, stretched in a pan, usually thinner than a risen Sicilian, with the sauce often ladled over the cheese. What Bravo does print is the name. The pie is Grandma. The slice is Grandma Slice. The photo on this page shows a square pie with mozzarella, tomato sauce, and basil. Fresh mozzarella and plum tomatoes are optional toppings on the pie page, so they are add-ons, not the printed base.
